Celiac Research Study

Survey Needs Participants!

The Celiac Disease Center at Columbia University is starting a research study to assess the knowledge of chefs and the general public about celiac disease. We will also be looking at people that follow the gluten free diet (because of celiac disease or gluten sensitivity) and whether their quality of life with respect to restaurant eating is affected because of the diet.


The results of this study will be written in a medical journal and will benefit individuals with celiac disease and gluten sensitivity.

Autism Facts

Unless you are one of the many families affected by autism, you may not have an understanding as to what autism is exactly or the impact that it has on families. In support of the Walk Now for Autism Speak Walks coming up in a few months we are adding some information on Autism. We hope that this will bring a better understanding to autism and why it is a complicated issue.

Facts
•1percent of the U.S. population ages 3-17 have an autism spectrum disorder
•Autism effects 1 in 110 children and 1in 70 boys
•Boys are 4times more likely than girls to have Autism, but girls seem to have more severe cases than boys
•Autism is the fastest growing developmental disability
•Approximately 4million babies born every year, 24,000 will be autistic
•Autism costs the nation over $35Billion per year
•More children will be diagnosed with autism than AIDS, diabetes and cancer combined
•Government statistics suggest that the rate of autism is increasing 10-17 percent
•Autism receives less than 5 percent of research funding for childhood diseases

About Autism


•Autism is part of a group of disorders known as autism spectrum disorders, is a complex neurobiological disorder that typically lasts their entire lifetime.
•The disorder is characterized by varying degrees of impairment in communication skills and social abilities, and also by repetitive behavior.
•symptoms can be mild to severe, and have different traits. Some may have difficulty speaking, reading and writing, while another may be so high functioning he/she is able to attend a normal school.
•No one knows for sure how children get autism
•Recent studies suggest a strong genetic basis for autism--- up to 20 sets of genes may play a part in its development.
•Many treatments and therapies for autism have come about, but there is no cure for autism
•Signs of autism are that your child does not communicate and if they do, they speak in words that you cannot understand. They screech loudly instead of crying, do not keep eye contact, have trouble reading social cues, are prone to repetitive behavior, and may be more sensitive to light, touch and sound than other children.

Walk Now for Autism Speaks

For the second consecutive year, Raisin Rack will be one of the corporate sponsors for the Autism Walk. We will be organizing two walk teams, one for the Westerville store, and the other for the Canton store. Both stores will engage in Raisin’ Awareness fund-raising and educational activities in the upcoming months. We will communicate details through our website, e-mails, Facebook, Twitter, and blog for both the Cleveland and Westerville stores. We are once again please to be partnering with Walk Now for Autism Speaks and to provide support for the families affected by autism. In addition to our 2009 corporate sponsorship, the staff at both Raisin Rack locations managed to raise a combined $5,000 from donations of the sale on selected items, through the sale of puzzle pieces at the registers and the generous donations made by our customers. Once again this year Raisin Rack will have a tent set outside the walk in Columbus where free product samples, information and coupons from gluten-free vendors and partners will be offered.
The walk in Cleveland takes place on Sunday, September 26, 2010 at Voinovich Park with the walk starting at 10am. The walk in Columbus takes place on Sunday, October 10, 2010 at Jerome Schottenstein Center at The Ohio State University with the walk starting at 11am.

1-2-3 Gluten Free

1-2-3 Gluten Free is a local company out of Cleveland, Ohio that is run by a mother- daughter team. 1-2-3 Gluten Free Inc, is committed to providing foods that are as easy as 1-2-3 to prepare and that taste delicious. Their goal is to set new standards in the taste of gluten free foods. All products are manufactured in a dedicated gluten- free, peanut-free, nut-free and allergy free facility. All products are also free of eggs, dairy (including casein), all but two are free of corn and all but one are free of soy and their labels clearly indicate this. 1-2-3 Gluten Free tries to develop products that their customers want and are constantly in the process of developing new products and welcome any suggestions for products you would like to see or any recipes you would like to share.

Here is a recipe from 1-2-3 Gluten Free for Ice Cream Sandwiches

1 package of 1-2-3 Gluten Free Lindsay’s Lipsmackin’ Roll Out and Cut Sugar Cookies
1 cup of Dutch processed cocoa powder
4 large eggs
1/2 cup chocolate syrup
2 sticks unsalted butter, melted
1/2 cup water

Adjust oven rack to middle of oven and preheat oven to 350F. Lightly spray large jellyroll pan with non- stick spray. Then, line pan with parchment paper. DO NOT spray parchment paper.

In bowl of mixer with whisk attachment, place eggs and chocolate syrup. Add approximately 1/2 cup of Mix. Blend well. Add water until mixed well.

In separate bowl blend remaining mix with cocoa powder.

Using a silicone or rubber spatula, fold cookie/cocoa powder mix into wet ingredients.

Using an off set spatula spread batter evenly in the pan.

Bake for approximately 8-10 minutes, until cookie springs back when touched with finger. Place pan on wire rack and let cool for approximately 5 minutes. Then, invert cookie onto work surface and remove parchment paper. Let cool completely approximately 30 minutes.

Using biscuit cutter, cut round cookies out of large cookie sheet and set aside.

Quickly spread ice cream onto wax paper. Using the same size biscuit cutter, cut out ice cream rounds. Place rounds between two cookies and freeze. Once frozen well individually wrap ice cream sandwiches in wax paper and then foil and keep in freezer until ready to serve. Enjoy!

Gluten Intolerance Group (GIG)

The Gluten Intolerance Group (GIG) is a nationally based program to help those with gluten intolerance. The branches and partners of GIG embrace and support the mission and goals that are set up by the Gluten Intolerance Group. GIG partners are independent organizations that work with GIG to benefit the entire celiac and gluten intolerance communities. GIG believes by partnering with other organizations, we can work more effectively toward national unity that is needed to be respected by manufactures, government, and other leaders affecting our health care and food regulations.

One of the GIG branches is in Canton, OH. It is the Alliance Canton Gluten Intolerance Group. It is held at the Raisin Rack Natural Food Market once a month. Dental Advice

Dr. Ted Malahias, has given us the following information concerning dental products and the gluten they may contain. He states that several dental suppliers he contacted do not include gluten in their products. He advises that they best way to be sure is to find out which products your dentist uses and to call the companies directly. The plishing paste is now available gluten free.
