1-2-3 Gluten Free

1-2-3 Gluten Free is a local company out of Cleveland, Ohio that is run by a mother- daughter team. 1-2-3 Gluten Free Inc, is committed to providing foods that are as easy as 1-2-3 to prepare and that taste delicious. Their goal is to set new standards in the taste of gluten free foods. All products are manufactured in a dedicated gluten- free, peanut-free, nut-free and allergy free facility. All products are also free of eggs, dairy (including casein), all but two are free of corn and all but one are free of soy and their labels clearly indicate this. 1-2-3 Gluten Free tries to develop products that their customers want and are constantly in the process of developing new products and welcome any suggestions for products you would like to see or any recipes you would like to share.

Here is a recipe from 1-2-3 Gluten Free for Ice Cream Sandwiches

1 package of 1-2-3 Gluten Free Lindsay’s Lipsmackin’ Roll Out and Cut Sugar Cookies
1 cup of Dutch processed cocoa powder
4 large eggs
1/2 cup chocolate syrup
2 sticks unsalted butter, melted
1/2 cup water

Adjust oven rack to middle of oven and preheat oven to 350F. Lightly spray large jellyroll pan with non- stick spray. Then, line pan with parchment paper. DO NOT spray parchment paper.

In bowl of mixer with whisk attachment, place eggs and chocolate syrup. Add approximately 1/2 cup of Mix. Blend well. Add water until mixed well.

In separate bowl blend remaining mix with cocoa powder.

Using a silicone or rubber spatula, fold cookie/cocoa powder mix into wet ingredients.

Using an off set spatula spread batter evenly in the pan.

Bake for approximately 8-10 minutes, until cookie springs back when touched with finger. Place pan on wire rack and let cool for approximately 5 minutes. Then, invert cookie onto work surface and remove parchment paper. Let cool completely approximately 30 minutes.

Using biscuit cutter, cut round cookies out of large cookie sheet and set aside.

Quickly spread ice cream onto wax paper. Using the same size biscuit cutter, cut out ice cream rounds. Place rounds between two cookies and freeze. Once frozen well individually wrap ice cream sandwiches in wax paper and then foil and keep in freezer until ready to serve. Enjoy!
